Next, sign up for a class with an expert paella chef.

The chefs-in-training need to look the part.

Now, gather your ingredients.

Authentic paella is made with chicken and rabbit, which is cooked first.

When the meat is well cooked, add the vegetables.

Then mix everything together again.

Now is the time for the water to make the broth, then the rice.

I was surprised at how much water was needed.

Now comes the hard part.  Maximim concentration, anticipation and plenty of wine is needed for this part of the process.
